Special Program Miami / South of France

Program Description

This course is a dual Miami and South of France Cooking Program. Participants will enroll for a 10 month course and you will have the option of either French Cooking or Pastry classes.

Two months of the course will take place in Miami, two months will be in the South of France, and there will be six months of an internship in France.

This program is geared for people from all levels including beginners, professions, and those looking for a career change. This is a great choice for those who are interested in French cuisine or are looking to add to their preexisting training. This program will be fun at a 1 Michelin Star level.


Not only will you have the chance to live in sunny Miami, you will also be able to experience the Languedoc Roussillon region in the south of France. This area is along the Mediterranean and very near to the Spanish border.

All of the instructors of this program are extremely skilled and experienced. They are culled from high-end hotels and restaurants. The differences in the diverse teachers from Miami and France will give you a wide variety of expertise and the hands-on classes will ensure that you receive the best training. The four months of classes will prepare you for the intense internship.
Miami: Two Months

There are two modules which last four weeks each. The first month will concentrate on introductory dishes, while the second month will focus on increasingly complex dishes. There are four hours of class each day for five days and your weekends are free.

When you arrive in Miami, your French level will be assessed. While you are living in Miami, you will be expected to attend intensive French lessons.

- 3rd Week: Fish dishes
- 4th Week: Meat dishes

Pastry Course
- 1st Week: Breads, Viennoiseries, Doughs
- 2nd Week: Cakes and Entremets
- 3rd Week: Chocolates
- 4th Week: Plated Desserts and Decoration

After you are finished with the Miami portion of your classes, you will have one month to organize your Student Visa and finalize your travel to France.

South of France: Two Months

This program is also composed of two modules which last four weeks each. The more challenging dishes will be taught in the second month. There are four hours of class a day, five days a week. There will be an additional three hours of intensive French lessons daily and your weekends will be open.

Six Month Internship: Restaurant in France (1 Michelin Star level)

Students who wish to participate in a local internship will be placed in a restaurant that corresponds to their skill level. Students will receive a stipend of 436 Euros a month, meals, and accommodation.

Gastronomicom works with high-end restaurants inn hotels and other reputable restaurants in France such as the Relais-Châteaux, Leading Hotels of the World, and other Luxury Restaurants.
