3 Month Program French Cooking or French Pastry

Program Description

Three Month Culinary Program (240 hours)

This course is taught at the 1 Michelin Star level and is suited to beginners and professionals who would like to either learn or add to their knowledge of French Cooking or Pastry techniques. This program will train aspiring chefs a variety of dishes over a three month period in Miami.

There are three modules which last four weeks each. The more challenging dishes will be taught in the second and third months. There will be four hours of classes each day for five days of the week. Your weekends are open for exploring the exciting city of Miami.

Course Content

Cooking Course
- 1st Week: Cold Starters
- 2nd Week: Hot Starters
- 3rd Week: Fish dishes
- 4th Week: Meat dishes

OR

Pastry Course

- 1st Week: Breads, Viennoiseries, Doughs
- 2nd Week: Cakes and Entremets
- 3rd Week: Chocolates
- 4th Week: Plated Desserts and Decoration

Program participants will be placed in groups of two. Our teachers are extremely skilled and experienced. Their goal is to train you to develop the skills necessary to become a culinary professional.
